Recipe adapted from: AHealthyLifeForMe



3 Egg Whites

2  tbs Honey

1 tsp Vanilla extract

1 tsp Cinnamon, ground

1.5 tsp Baking Powder

0.5 tspBaking soda

1 tsp Fresh Lemon juice

1 c Blueberries

0.5 c Plain Greek Yogurt Fat Free (I use Fage)

3 Scoop French Vanilla Protein Powder (I use Designer Whey)

1c Soy Milk Very Vanilla

0.5c Quaker Old Fashion Oats

1 c Whole Wheat Pastry Flour (I use Bob's Red Mill)



1)Line muffin pan and lightly spray with cooking spray; Preheat over to 350 F

2) Combine wet ingredients in mixer

3) Combine dry ingredients in separate bowl, slowly add to mixer

4) Fold in blueberries

5) Scoop batter into muffin tin and place in oven; bake for ~20 minutes


Store in refrigerator.
