Okay, I know it's not pretty. It even looks gross...but hear me out. It's delicious, easy, filling & less than 400 calories even with all the toppings.
I made a ton because it's exam week and I like to have a lot of food made ahead that I can just heat up and eat while I study.
Here's the recipe:
Makes 8 1cup servings
(Note: 2c dry quinoa = 8c cooked*)
- Boil quinoa in taco seasoning.
- In separate pot heat up beans, tomatoes and corn; drain.
- Combine and allow cool.
- I scooped 1c onto a bed of mixed greens and garnished with .25 avocado, salsa and a chopped green onion. Total calories for the meal: 372
